Where Shift4 Dine wins
You can see the processor's margin. Interchange plus means the markup is a number in your quote rather than blended into one percentage. Over a year at meaningful volume that visibility is usually worth more than any feature on either list.
The rate escalation difference
On Toast's entry tier, adding online ordering or loyalty raises the processing rate on every transaction you take. That is not how Shift4 Dine is structured, and for a growing restaurant it compounds.

The honest way to run this decision
Get both quotes in the same units. Ask Toast for your effective rate at your volume, in writing, with every module you would actually run priced in, because the entry tier's rate climbs as modules stack and the higher rate applies to every order. Ask us for the same thing: interchange plus markup, the $29.99 per terminal, and the annual fees itemized. Two numbers, same units, your volume. That comparison takes one afternoon and ends most of the argument.
Then test the kitchen claim against your actual bottleneck. Toast's kitchen tooling advantage is real, but it matters in proportion to how hard your kitchen leans on routing, timing and multi station choreography. A twelve table bistro is not the room that advantage was built for; a two hundred cover Friday with a six station line is. Be honest about which one you run, and if you are the second kind, make us prove our kitchen screens against yours in a demo rather than taking this page's word for anything.
Whichever way it lands, do not sign either agreement without reading the termination terms aloud. Ours is 36 months and says so above. Toast's is reported at one to three years with termination fees reported from $1,000 to above $5,000. The contract you can recite is the one you will not be surprised by.
